Chocolate and bread is delicious, but chocolate zucchini bread?

Well before you say “how dare you mix savoury and sweet”, you have to try this! The texture is perfect and there’s plenty of chocolatey goodness thanks to the cacao and the added bar of The Chocolate Yogi chocolate.

I recently became a recipe ambassador for The Chocolate Yogi so I wanted to find a recipe that was rich in chocolate flavour yet guilt free (you know, in case you want to eat the whole loaf in one sitting).

So I used the ‘Head in the Clouds’ chocolate from TCY.

I was so happy with how this loaf turned out. It definitely didn’t last long either. You would think we had a family of four, but nope just one hungry vegan man.

Instructions
  1. Preheat oven to 180'C (350'F). Line a 9x5 inch baking pan with parchment paper and set aside.
  2. Place your grated zucchini in a clean tea towel or paper towel and gently squeeze out the excess moisture.
  3. Stir together all dry ingredients in a large mixing bowl.
  4. Add the wet ingredients, and gently stir to form your batter.
  5. Pour your batter into your baking pan and then place into the oven.
  6. Bake for 35-40 minutes.
  7. Cool in tin for 5-10 minutes and then turn out onto a wire rack to cool. Enjoy!
